        1 tablespoon olive oil
        1 onion, chopped
        4 slices prosciutto, chopped
        2 cups fresh breadcrumbs
        2 garlic cloves, crushed
        1/3 cup chopped continental parsley
        1/3 cup (50g) slivered almonds
        1/2 cup (80g) currants
        30g butter, chopped, softened

        Step 1

        Heat the olive oil in a frying pan. Cook the onion for 4 minutes. Add the prosciutto. Cook for 2 minutes. Transfer to a bowl. Add the breadcrumbs, garlic, parsley, almonds, currants and butter. Rub in the butter until well combined.
