Orange-roasted turkey breast with rice stuffing Recipe
Ingredients
1 cup cooked SunRice White Medium Grain Rice, cooled
2 tablespoons toasted pine nuts
grated rind and juice of 1 orange
1 tablespoon currants
1 tablespoon chopped fresh flat-leaf parsley
1 frozen turkey breast (about 1kg), thawed
olive oil spray
1 teaspoon ground cumin powder
1 cup Campbell's Real Stock Chicken

Method
Step 1
Preheat oven to 200°C. Place rice, pine nuts, orange rind, currants, and parsley in a small bowl and mix well. Season well with salt and pepper.
Step 2
Place turkey on a chopping board and open foil carefully. Make a deep incision along breast to open breast fillet. Place rice stuffing down the centre. Rewrap turkey in original foil.
Step 3
Place turkey into a roasting pan and roast for 40 minutes.
Step 4
Unwrap turkey and discard foil. Place skin-side up into roasting pan. Spray with olive oil and sprinkle with cumin. Pour orange juice and stock into roasting pan and return to oven. Bake for a further 30 to 35 minutes until golden and cooked through.
Step 5
Remove from oven and cover loosely with foil. Rest for 15 minutes before carving.
