      Parmesan-crusted roast potatoes Recipe

        Ingredients

        1kg King Edward or other floury potatoes, peeled, chopped
        1/2 cup (125ml) extra virgin olive oil
        1 cup (80g) grated parmesan
        1/4 cup (40g) semolina
        10-12 thyme sprigs

        Method
     
        Step 1

        Preheat the oven to 190°C.
        Step 2

        Place potato in a pan of cold, salted water over medium heat. Bring to a simmer and cook for 10-12 minutes until almost tender. Drain, then return to the pan and shake vigorously over medium heat to dry out and rough the edges.
        Step 3

        Pour 1/4 cup (60ml) oil in shallow roasting pan, then place in the oven to heat.
        Step 4

        Combine parmesan and semolina in a bowl and season. Toss potato in remaining 1/4 cup (60ml) oil, then coat in parmesan mixture. Carefully remove pan from oven and add potato to hot oil. Scatter with thyme and roast for 25-35 minutes, turning once, until golden and crisp.
