    Roast turkey with pistachio and lemon stuffing Recipe
        Ingredients

        60g butter
        1 small brown onion, finely chopped
        2/3 cup fresh breadcrumbs
        1/3 cup pistachio kernels, toasted, chopped
        2 teaspoons finely grated lemon rind
        1/4 cup lemon juice
        1 tablespoon chopped fresh lemon thyme
        2kg double turkey breast (see note)
        6 sprigs fresh lemon thyme
        2 tablespoons Gravox chicken gravy powder
        1 cup boiling water

        Method

        Step 1

        Melt half the butter in a frying pan over medium heat. Cook onion, stirring, for 3 to 4 minutes or until softened. Stir in breadcrumbs, pistachios, lemon rind, 2 tablespoons lemon juice and half the chopped thyme. Cook for 1 minute or until breadcrumbs are golden. Remove from heat.
        Step 2

        Place turkey, skin-side down, on a board. Press stuffing onto 1 turkey breast. Sandwich together to enclose stuffing. Tie with kitchen string at 3cm intervals.
        Step 3

        Preheat oven to 180°C/160°C fan-forced. Place remaining butter in a microwave-safe dish. Microwave on medium (50%) for 1 minute or until melted. Place thyme sprigs in a large roasting pan. Add 3/4 cup cold water. Place turkey, skin-side-up, on sprigs. Brush turkey with melted butter. Season with salt and pepper. Roast for 2 hours or until browned and cooked through.
        Step 4

        Transfer turkey to a plate. Cover with foil. Stand for 10 minutes before slicing.
        Step 5

        Meanwhile, place pan over medium heat. Remove and discard thyme sprigs. Add gravy powder to pan juices. Gradually stir in boiling water. Bring to the boil. Reduce heat to low. Simmer for 2 minutes or until slightly thickened. Stir in remaining lemon juice and chopped thyme. Serve turkey with gravy.
