Ingredients
3 x 250g punnets baby roma tomatoes, quartered
1 small red onion, finely chopped
2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
1/4 cup fresh baby basil leaves

Method
Step 1
Place tomatoes, onion, oil and vinegar in a bowl. Season with salt and pepper. Toss gently to combine. Cover. Set aside for 2 hours for flavours to develop.
Step 2
Add basil. Toss to combine. Serve.
