        2 (300g) turkey breast fillets
        2 tablespoons basil pesto
        150g chargrilled capsicum, quartered
        150g bocconcini or mozzarella cheese, torn into 8 pieces
        Olive oil spray

    Turkey involtini Recipe

        Step 1

        Slice each turkey breast crossways into 4 thin strips. Place between sheets of baking paper. Using a meat mallet or rolling pin, gently pound to flatten.
        Step 2

        Place 1 piece turkey on a board. Spread with 1 teaspoon pesto. Top with 1 piece capsicum, then 1 piece bocconcini or mozzarella. Roll up turkey from 1 short end to enclose. Secure with toothpicks. Repeat with remaining turkey, pesto, capsicum and cheese.
        Step 3

        Spray a large frying pan with oil. Heat over medium-high heat. Cook turkey, in batches, turning occasionally, for 8 minutes or until golden and cooked through. Transfer to a plate. Cover loosely with foil. Stand for 5 minutes. Slice. Serve.
