    Meatballs rice soup recipe


    300 grams minced beef
    1 large onion, chopped
    2 tablespoons parsley, chopped
    2 tablespoons coriander, chopped
    1/2 teaspoon ground cinnamon
    salt and pepper
    2 tablespoons oil
    4-5 cups chicken stock
    1 cup short grain rice washed and drained
    fresh parsley and mint leaves for garnish 


    - Preheat oven to 180 degrees Celsius.
    - Mix beef with half amount of onion, parsley and coriander in a bowl.
    - Season mixture with cinnamon, salt and pepper and mix well.
    - Shape mixture into small sized balls.
    - Arrange meatballs in oven tray and bake for about 10 minutes (cook halfway).
    - Heat oil in a pan over a medium heat, add remaining onion and stir till translucent.
    - Add meatballs, chicken stock and rice, bring to a boil.
    - Reduce heat and simmer till rice is cooked.
    - Garnish with parsley and mint leaves, serve hot.
