Vanilla Sponge Cupcakes Recipe
Ingredients
Gourmet Gadgetry Cupcake & Muffin Maker ,
For the cupcakes:,
115g caster sugar,
2 eggs,
1 teaspoon vanilla essence ,
1 teaspoon baking powder ,
115g self-raising flour,
100g butter (room temperature),

Method
Sift the flour into an adequate sized bowl.
Roughly break the room temperature butter into chunks, add them to the bowl, along with the sugar, the eggs, vanilla essence and the baking powder.
Stir or blend the mixture well until smooth and creamy.
We do suggest you add some sunflower oil spray, to the Cupcake Maker to eliminate the possibility of sticking (a thin layer of butter/margarine can also be used).
Now using a spoon, decant the mixture into the Cupcake cavities leaving space for the mixture to expand, once you have done this close the lid and turn the machine on at the switch.
Leave for 7-8 minutes and check for browning around the sides of the cakes. They may need to be left for a further 1-2 minutes. Once you are happy you can switch off the machine and leave to cool for a few minutes before removing with a wooden or plastic utensil.
Decorate your cakes as desired.
