        8 Coles RSPCA approved chicken drumsticks
        175g Masterfoods apricot chicken recipe base
        1 onion, sliced
        1/2 cup hot chicken stock
        1 cup San Remo couscous
        1+1/4 cups hot chicken stock
        1 tablespoon olive oil
        2 teaspoons lemon zest
        1/3 cup sultanas
        50g rocket leaves

        Step 1

        Preheat oven to 180°C or 160°C fan. Combine drumsticks, recipe base, onion, and stock in a bowl. Arrange in a baking tray and bake, turning once, for 1 hr, covering with foil for the last 10 mins of cooking.
        Step 2

        Place couscous in a medium bowl and pour over stock. Cover and set aside for 5 mins to soak. Fluff with fork, then stir in oil, lemon zest, sultanas and rocket. Season. Serve with chicken.
