      Bacon, Egg and Basil Cracked Pepper Fettuccine Recipe

        Ingredients
           1 tablespoon olive oil
        2 garlic cloves, crushed
        2 middle bacon rashers, rind removed, thinly sliced
        75g (3/4 cup) shredded Parmesan
        1/3 cup roughly chopped fresh basil leaves

        375g dried cracked pepper fettuccine (San Remo brand)
        2 eggs
        2 tablespoons sour lite cream
        Salt & ground black pepper, to taste

        Method
     

        Step 1

        Cook fettuccine in a large saucepan of salted boiling water following packet directions or until al dente. Lightly beat eggs, sour cream, salt and pepper in a small bowl until smooth. Heat olive oil in a frying pan over medium heat and cook the garlic for 1 minute. Add the bacon and cook, stirring occasionally for 3-4 minutes or until just crisp. Drain on paper towel.
        Step 2

        Drain fettuccine, return to the saucepan and then quickly stir through egg mixture, Parmesan and basil. Stir over medium-low heat for 2-3 minutes or until sauce is creamy. Stir in bacon and serve.
