Fruit mince tart Recipe
Ingredients
1/2 cup (75g) pure icing sugar
1 cup (150g) plain flour
75g chilled unsalted butter, chopped
2 egg yolks
1/2 teaspoon vanilla extract
300g fruit mince
200g white chocolate melts
1 sheet edible silver leaf*
300ml thickened cream, lightly whipped

Method
Step 1
To make pastry, combine sugar, flour and butter in bowl of a food processor and process until mixture resembles fine breadcrumbs. Add yolks and vanilla, then process until mixture comes together into a smooth ball. Cover with plastic wrap and chill for 30 minutes.
Step 2
Preheat oven to 180°C. Roll out pastry on a lightly floured surface, then use to line a lightly greased 10cm x 30cm rectangular loose-bottomed tart pan. Cover with baking paper, fill with pastry weights or uncooked rice, and bake for 15 minutes, then remove weights or rice and paper. Return to oven for 5 minutes until crisp and golden. Cool, remove from pan and spread with fruit mince.
Step 3
Melt chocolate in a bowl over a pan of simmering water (don't let bowl touch water). Spread the melted chocolate (about 5mm thick) on a baking sheet. Chill in the fridge until set, then cut chocolate with a star-shaped cutter, gently lifting the stars off the tray with a palette knife. Use tweezers to pull small pieces of silver leaf from its backing paper and place on the stars.
Step 4
To serve, spread the cream over the tart and decorate with stars.
