Night-before-Christmas slice recipe
Ingredients
1/2 cup brandy
2 eggs, lightly beaten
1 cup plain flour, sifted
1/4 cup self-raising flour, sifted
125g pecans
2 tablespoons apricot jam
2 cups mixed dried fruit
410g fruit mince
150g butter, chopped
1/2 cup firmly-packed brown sugar
2 teaspoons finely-grated orange rind
2 tablespoons orange juice

Step 1
Combine dried fruit, fruit mince, butter, sugar, orange rind, juice and 1/3 cup brandy in a saucepan over medium heat. Cook, stirring, for 3 to 5 minutes or until sugar dissolves. Remove to a large bowl. Allow to cool to room temperature.
Step 2
Preheat oven to 150°C. Grease a 4cm-deep, 19cm x 29cm (base) slice pan. Line with baking paper, allowing a 2cm overhang at both long ends.
Step 3
Add eggs and flours to dried fruit mixture. Stir to combine. Spread mixture over prepared pan. Top with nuts. Bake for 45 minutes or until a skewer inserted in the centre comes out clean.
Step 4
Combine jam and remaining brandy in a heatproof, microwave-safe bowl. Microwave on medium-high (70%) for 30 seconds or until jam melts. Brush cake top with jam. Cover with foil. Allow to cool in pan in a cool dark place overnight. Cut into pieces. Serve.
