    Plum & star anise glazed ham Recipe

        155g (3/4 cup, firmly packed) brown sugar
        170g (1/2 cup) plum jam
        1 tablespoon fresh orange juice
        6 whole star anise
        7kg whole leg ham, on the bone whole cloves, to decorate
        250ml (1 cup) water
        Star anise, extra, to decorate

    Plum & star anise glazed ham Recipe

        Step 1

        Preheat oven to 180°C. Place an oven shelf in the lowest position and remove the other shelves. Line a large roasting pan with non-stick baking paper.
        Step 2

        Place the sugar, jam, orange juice and star anise in a small saucepan over low heat. Cook, stirring, for 2-3 minutes or until the sugar dissolves. Set aside to cool.
        Step 3

        Use a small sharp knife to cut around the shank in a zigzag pattern, about 10cm from the end. Carefully run the knife under the rind around the edge of the ham. Carefully lift off the rind, in one piece, by running your fingers between the rind and the fat.
        Step 4

        Trim the excess fat from the ham, leaving a 1cm-thick covering all over. Use a knife to score the fat in a diamond pattern, about 5cm apart and 5mm deep. Stud the centres of diamonds with cloves.
        Step 5

        Pour the water into the prepared pan. Place the ham on a wire rack in the pan. Wrap the shank in foil. Pour half the glaze over the ham and brush to coat. Bake for 30 minutes. Turn the pan 180 degrees and pour over half the remaining glaze. bake for 30 minutes.
        Step 6

        Brush the ham with the remaining glaze, reserving the star anise. Bake for 10 minutes or until golden. Decorate the ham with the reserved star anise, and the extra star anise. Set the ham aside for 15 minutes to rest before carving. Transfer to a serving platter.
