Carpaccio meal ideas
Ingredients
1 tablespoon olive oil
300g good-quality beef fillet, trimmed of fat and sinew
100g baby rocket, to garnish
Capers, to garnish
1 lemon, cut into wedges
Sauce
1 egg yolk
3 teaspoons Dijon mustard
1/4 cup (60ml) lemon juice
75ml olive oil
2 tablespoons thick cream

Method
Step 1
Heat 1 tablespoon oil in a non-stick frypan over high heat until smoking. Add beef and cook for 45 seconds, turning to just seal all over. Transfer to a plate and season with salt and pepper. Allow to cool, then wrap in plastic wrap and place in the freezer for 20 minutes.
Step 2
Meanwhile to make the sauce, place the egg yolk, mustard and lemon juice in a bowl, then slowly whisk in olive oil until mixture becomes thick. Stir in the cream, then season with salt and pepper.
Step 3
Wash the baby rocket and dry well.
Step 4
Use a sharp knife to cut the beef into wafer thin slices, then arrange the slices on a platter. Drizzle with half of the sauce, season with pepper, sprinkle with capers and garnish with the rocket.
Step 5
Place the remaining sauce in a jug for the table. Serve with lemon wedges.
