    Cracked wheat Salad with pomegranates recipe


    2 Cups fine burghul
    2 Cups boiling water
    1 Tablespoon tomato paste
    1 Tablespoon bell pepper paste
    1 Onion, finely chopped
    Salt and Pepper
    1 Tablespoon paprika
    1 Teaspoon dried mint
    1 Cup olive oil
    2 Tablespoon pomegranates syrup (molasses)
    ¾ Cup parsley, finely chopped
    4 Spring onions, chopped
    4 Garlic cloves, finely chopped
    1 Lettuce, chopped
    Fresh mint leaves for garnish


    - Boil 2 cups of water, soak burghul for few minutes, drain.
    - Mix tomato, pepper paste cracked wheat in a bowl.
    - Add onion and season with salt, pepper, paprika and dried mint.
    - Whisk olive oil gradually with pomegranates syrup.
    - Add remaining ingredients and refrigerate for one to two hours.
    - Garnish burghul salad with mint leaves and serve cold.
