    Fresh Fava Beans Salad recipe


    1 Medium onion, chopped
    3 Tbsp. olive oil
    2 cloves garlic, minced
    8 Artichoke hearts, fresh, canned or frozen
    1/2 kg fresh fava beans, skinned
    1/2 kg green peas
    2 Tbsp. fresh dill, chopped
    2 Tbsp. fresh mint, chopped
    Salt and pepper
    1 tsp. lemon juice
    1/4 cup water


    -In a saute pan, heat the oil over medium-high heat.
    -Saute the onions for 7 minutes or until golden brown, stirring occasionally.
    -Add the garlic and cook for 3 more minutes.
    -Combine the artichoke hearts, fava beans, and green peas.
    -Blanch the artichoke and green peas if fresh and simply rinse them if frozen.
    -Toss in the greens, season with salt and pepper adding lemon juice and water.
    -Cover and simmer over medium-high heat for about 10 minutes or until soft.
    -Garnish the salad with rings of sliced tomatoes before serving.
    -It is preferable to prepare this salad several hours before serving.
