    Oxtail Stew recipe


    1 kilo Akawi
    2 tablespoons flour
    1 tablespoon oil
    4 garlic cloves, chopped
    1 medium sized onion, minced
    1 cup carrots, chopped
    1 cup water
    1 teaspoon sugar
    2 cups small onions
    Salt and pepper
    Fresh spices
    Thyme, parsley and celery


    - Preheat oven to 180 degrees Celsius.
    - Season Akawi meat with salt and pepper. Sprinkle flour over the meat.
    - Heat the oil over medium heat in a wide heavy saucepan,Brown meat on both sides.
    - Add chopped garlic, chopped onion, carrots and water
    - Stir in fresh spices to the mixture. Cover and bring to boil.
    - Heat sugar until syrup caramelizes,in a separate pan
    - Add onion before sugar burns. Stir until a golden skin appears. Add the caramelized onion in the meat mixture.
    - Place all in an oven of 180 degrees Celsius for 40 minutes.
    - Serve in large bowl and garnish.

    Note: Akawi is the calf tail. It is considered a very delicious meat and the recipe can be served as a separate dish or with rice, potatoes or macaron
