    Pastry Dough Method recipe


    For the dough
    3 cups flour
    1 teaspoon salt
    2 teaspoons powdered milk
    1 cup water

    For the filling:
    3 tablespoons olive oil
    1 onion, finely chopped
    2 garlic cloves, finely minced
    1 kilo ground beef
    Salt and pepper
    1/4 teaspoon ground spices
    1 cup ghee, melted


    For the dough:
    - Mix flour with salt and milk in an electric mixture over low speed.
    - Add water gradually and knead on a medium speed till soft dough achieved.
    - Divide dough to equal sized balls, shape into small orange size.
    - Spread dough pieces on a floured surface and roll to very thin circles.
    - Heat large flat circular pan over a medium heat.
    - Place each circle for a minute on each side; continue until all dough is finished.
    - Place wax paper between each layer and cover with kitchen towel.

    For filling:
    - Heat oil in a pan over medium high heat, add onion and garlic, stir for about 5 minutes or until translucent.
    - Add beef, cook for about 10 minutes, season with salt, pepper and spices and stir.
    - Set aside and let cool.

    To assemble:
    - Preheat oven to 180 degree Celsius.
    - Grease round oven tray.
    - Place a layer of Rokak, drizzle with some ghee, repeat same step with another layer and place it on top of the first one.
    - Distribute a suitable amount on ground beef, top it with 2 layers of Rokak fulfilling the previous step.
    - Continue layering it with ground beef and Rokak till all quantity is finished.
    - Cut into squares and brush surface with ghee.
    - Cover with baking paper then aluminum foil, bake for about 20 minutes.
    - Remove paper and foil, place again in oven for about 10 minutes or until crisp golden brown surface achieved.
    - Serve warm.
