    Zucchini filled with cheesy sausages recipe




    Ingredients

    1/2 kilo sausages, casing removed
    1 medium onion, chopped
    2 garlic cloves, finely minced
    2 medium tomatoes, diced
    1/2 cup mozzarella cheese, small cubes
    1/2 cup feta cheese, small cubes
    1 tablespoon fresh thyme
    1/2 teaspoon cinnamon powder
    6 medium zucchini
    1 tablespoon olive oil
    1/2 cup tomato juice
    1 tablespoon fresh mint, chopped
    Salt and pepper
    2 tablespoons Parmesan cheese, grated 

    Method

    - Place ground sausages in a pan over a medium- high heat, add onions and garlic stir , leave for about 10 minutes or until sausage cooked.
    - Put sausages in a bowl; add tomatoes, mozzarella cubes, feta cheese, thyme, cinnamon and mix to combine, season with salt and pepper, set aside.
    - Cut off zucchini ends, remove flesh forming a (Boat shape), and setaside.
    - Mix oil with tomato juice, mint in a bowl, and pour into oven dish.
    - Arrange zucchini in baking dish; fill with sausage mixture, top with Parmesan cheese.
    - Bake for about 20 - 25 minutes or until done, serve warm.
