    Jam stuffed muffin recipe


    2 Cups flour
    2/3 Cup white sugar
    1/3 Cup oil
    1 Teaspoon vanilla
    1 Egg
    3/4 Cup butter milk
    Jam (strawberry, berry or apricot) for stuffing
    For the topping
    1/4 Cup unsalted butter
    1 Teaspoon powdered cinnamon
    1/2 Cup sugar


    - Preheat the oven to 180?c.
    - Mix the flour with the sugar and the oil in the electric mixer at medium speed.
    - Add the vanilla, the eggs then the buttermilk gradually and mix well until you get a smooth dough.
    - Pour half the dough over a buttered muffin tray.
    - Flatten the surface of the dough using the back of the spoon, and make a hole in the middle to insert the stuffing.
    - Fill the hole with a tablespoon of jam then cover the stuffing with another amount of dough (make sure not to have any pores in the dough so as not to let the vapor out while baking).
    - Repeat the process with the rest of the dough. Bake the muffins in the oven for 20 minutes or until cooked.
    - Leave them on a metal grid until they cool down slightly.
    - Meanwhile, heat the butter at a medium temperature until it melts down. Add the cinnamon and the sugar to the butter and stir until they are mixed a sauce is formed.
