    Baked Fish with Tomatoes recipe



    Ingredients:

    1/2 cup olive oil
    2 onions, chopped coarsely
    1 (20 oz) can tomatoes
    1/2 cup white wine
    1/2 parsley, chopped
    1 garlic clove, crushed
    salt and pepper to taste
    2 lbs. fish fillet (firm fish like turbot, bass, red snapper)

    Preparation:

    Heat oil and add onion.  Cook until translucent.  Add tomatoes,
    wine, parsley, garlic, salt and pepper.  Cover and simmer for 10
    minutes.  Place fish in a baking dish.  Cover with the sauce.
    Bake in a 350 degree oven for 25 minutes or until the fish
    flakes easy.
