    Chicken Breakfast Skillet Recipe


        1 pound Chicken, ground
        2 tablespoons olive oil, divided
        1 package O'Brien frozen potatoes, 16 oz.
        6 eggs
        1/4 cup cheddar cheese, shredded
    Cooking Instructions

        Heat 1 tablespoon of oil in a large skillet over medium heat.  Add ground chicken and cook stirring often for 8-10 minutes, or until lightly browned.  Remove from pan and set aside.
        Add remaining oil to pan.  Whisk eggs with a fork and add to pan.  Cook, stirring, until all set.
        Cook potatoes according to package directions.  Combine potatoes with the cooked chicken and eggs.
        Serve with cheddar cheese
