    Rare roast beef with chilli relish Recipe

        1.5kg beef fillet or beef scotch fillet
        1 tablespoon olive oil

    Chilli relish

        1 tablespoon olive oil
        1 small red onion, finely chopped
        4 small roma tomatoes, chopped
        1 garlic clove, crushed
        4 long red chillies, chopped
        1/2 cup brown sugar
        2 tablespoons lime juice

    Rare roast beef with chilli relish Recipe

        Step 1

        Preheat oven to 180°C/160°C fan-forced. Place beef in a large roasting pan. Rub oil over beef. Season with salt and pepper.
        Step 2

        Roast for 45 minutes to 1 hour for rare or until cooked to your liking (see note). Cover with foil. Cool to room temperature. Refrigerate.
        Step 3

        Meanwhile, make relish Combine oil, onion, tomato, garlic, chilli, sugar and lime juice in a saucepan over medium heat. Cook, stirring, for 3 minutes or until sugar has dissolved. Bring to the boil. Reduce heat to low. Simmer, uncovered, stirring occasionally, for 1 hour or until thickened. Set aside to cool. Refrigerate.
        Step 4

        Thickly slice beef. Serve with relish.
