Ingredients
700g cherries, pitted
1/2 cup firmly packed brown sugar
1/3 cup currants
1/4 cup balsamic vinegar
1 cinnamon stick
carved leg ham, to serve

Method
Step 1
Place cherries, sugar, currants, vinegar and cinnamon in a saucepan over medium-low heat. Cook, stirring constantly, for 10 minutes or until sugar is dissolved. Bring to the boil. Reduce heat to low. Simmer, uncovered, stirring occasionally, for 35 to 40 minutes or until thick. Remove cinnamon. Spoon balsamic cherries into a large, warm, sterilised jar. Allow to cool. Seal and refrigerate until ready to serve.
Step 2
Spoon balsamic cherries over ham. Serve.
