      Chocolate and apricot biscotti desserts recipes

        Ingredients

        1 1/2 cups (200g) plain flour, sifted
        1/4 cup (25g) cocoa, sifted
        1 1/2 teaspoons baking powder
        1/2 teaspoon cinnamon
        1/2 cup (75g) chopped dried apricots
        75g chopped dark chocolate
        1/2 cup (110g) caster sugar
        4 eggs, lightly beaten

        Method

        Step 1

        Preheat oven to 160°C. Line a baking tray with non-stick baking paper. Place the flour, cocoa, baking powder and cinnamon in a large bowl. Add the apricots, chocolate, sugar and eggs. Mix until well combined.
        Step 2

        Transfer the dough to a flour-dusted surface and knead with hands until smooth. Shape into a log and place on the prepared tray. Press along the top to flatten the log slightly. Bake for 30 minutes, remove from the oven and allow to cool slightly.
        Step 3

        Cut the log into 1cm-thick slices, place on the baking tray and cook for another 12-15 minutes until hard. Serve as a snack or after-dinner treat.
