Frosted fruit mince muffins desserts recipes
Method
Step 1
Combine fruit in a bowl with rind, juice and brandy. Set aside for 30 minutes.
Step 2
Preheat the oven to 180°C. Line a 12-hole muffin pan with foil cases.
Step 3
Divide the marzipan into 12 equal pieces, roll into balls, then set aside.
Step 4
Place eggs, butter, sugar, flour, spice and milk in a large bowl and beat with electric beaters until combined. Stir in fruit and soaking liquid. Half-fill muffin holes with mixture, place a marzipan ball in each and cover with remaining mixture. Bake for 25 minutes or until golden and cooked through, then cool.
Step 5
To make frosting, place sugar in a pan with 1/3 cup (80ml) water and stir over low heat to dissolve sugar. Increase heat and boil mixture for 5 minutes, brushing down sides of pan with a damp pastry brush. Cool for a few minutes.
Step 6
Place eggwhites in bowl of an electric mixer and beat until soft peaks form. With motor running on low, slowly add sugar syrup in a steady stream. When all syrup has been added, beat on high for 10 minutes until mixture is thick, pale and fluffy. Spread frosting on muffins and decorate with candles.
