Roasted macadamia & coconut truffles meal ideas
Ingredients
125g (3/4 cup) macadamia nuts
65g (3/4 cup) desiccated coconut
400g good-quality dark chocolate, broken into squares
160ml (2/3 cup) coconut cream
2 tablespoons coffee-flavoured liqueur
50g (1/2 cup) cocoa powder, sifted

Method
Step 1
Preheat oven to 180°C. Line a baking tray with non-stick baking paper. Place the macadamia nuts on the lined tray and cook in preheated oven for 5-6 minutes or until golden (see microwave tip 1). Transfer to a bowl to cool.
Step 2
Place the coconut on the lined tray and cook in preheated oven for 2-3 minutes or until golden (see microwave tip 2). Remove from the oven and set aside.
Step 3
Place the chocolate and coconut cream in a medium heatproof bowl over simmering water. Use a metal spoon to stir occasionally for 5-6 minutes or until the chocolate melts and the mixture is smooth. Remove from the heat.
Step 4
Finely chop macadamia nuts and stir into the chocolate mixture with the coconut and liqueur. Place in the fridge to chill for 3 hours or until firm enough to roll into balls.
Step 5
Line a tray with non-stick baking paper. Place cocoa in a small bowl. Roll 3 teaspoons of the chocolate mixture into a small ball and toss in cocoa to coat. Place on the lined tray. Repeat with remaining chocolate mixture and cocoa. Place in the fridge for at least 1 hour to chill before serving.
