    Chicken with bread dumplings recipe


    For the chicken
    1 whole chicken cut into 8 pieces
    Salt and pepper
    1 teaspoon ground spices (cardamom, cinnamon, cloves, Nutmeg)
    3 Tablespoons olive oil
    1 Large onion, diced
    2 Garlic cloves, finely chopped
    2 Eggplants, medium cubes
    2 Tomatoes, diced
    1 1/2 Cup chickpeas, canned
    1 Cup chicken stock or water

    For the bread dumplings
    4 Bread slices
    1/2 Tablespoon black olive, chopped
    1/2 Cup warm milk
    2 Egg whites, beaten
    1 Tablespoon parsley, chopped
    1/2 Cup mozzarella cheese, grated
    Salt and pepper 


    For chicken
    - Wash chicken, rinse and pat dry, season with salt, pepper and spices.
    - Preheat oven to 180 degree Celsius.
    - Heat oil in a pan over medium heat, add chicken and stir for about 5 minutes or until golden brown.
    - Add onion and stir for 5 minutes; add remaining ingredients, season with salt and pepper until boiling.
    - Reduce heat and simmer for 10 minutes.

    For Bread Dumplings
    - Cut bread slices into small cubes in a bowl; add all ingredients, season with salt and pepper.
    - Mix and shape to small balls (Walnut size)
    - Arrange balls on a baking tray, add chicken-eggplant mixture.(mix gently)
    - Place in the oven for 30 minutes or until chicken is cooked.
    - Serve Sefria warm.
