    Joji Kabab recipe


    for chicken
    1/2 teaspoon saffron
    3 tablespoons lime juice
    3 tablespoons olive oil
    1/2 cup chopped onion
    1 teaspoon white pepper
    1/2 kilo boneless skinless chicken legs

    For garnish
    3 tablespoons ghee
    1 teaspoon paprika 


    - Mix saffron with lime juice and onion in a bowl, season with salt and pepper.
    - Marinate chicken legs with the mixture.
    - Cover and refrigerate for 3 hours (or overnight).
    - Place marinated chicken in skewers; grill each side for about 7 minutes.
    - Heat ghee with paprika for about a minute, set aside.
    - Arrange chicken on top of plain rice, drizzle with ghee-paprika mixture.
