    leg of Lamb with Sweet Potato recipe


    1 Lamb leg (about 3 kilos)
    2 Cups sweet potatoes, diced into big pieces and baked in the oven
    4 Cups spinach, boiled
    ¼ tsp turmeric,ground
    ¼ tsp cardamom,ground
    ¼ tsp cumin,ground
    Salt and pepper
    ¼ Cup olive oil
    1 Cup meat stock (or water)
    2 Tbs honey
    Pine nuts, roasted for decoration


    -Remove internal bone from the lamb`s leg while keeping shank bone so that inside the meat cavity is formed to keep the shape.
    -Preheat oven to 180°C.
    -Mix sweet potato and spinach, season with spices, salt and pepper.
    -Place a portion of the filling mixture in the leg internal cavity until full (save remaining filling for serving), tie with a string to keep the shape.
    -Heat oil in roasting pan over medium heat; fry the lamb leg from all sides until browned.
    -Pour stock and brush the lamb leg with honey, Cover with aluminum foil for half the cooking period, place in oven for about 2 ½ hours or until done( remove the foil in the other half of the cooking time).
    -Place remaining quantity of the sweet potato and spinach in a serving plate (after heating), top with sauce resulting from the cooking.
    -Place the lamb leg in the serving plate, sprinkle with pine nuts.
