    Sausage -Artichoke open faced Pie recipe


    2 cups flour
    1/2 cup cold butter
    1/2 teaspoon salt
    3 tablespoon cold vegetable fat
    5 tablespoon iced water

    For stuffing
    2 cups sausage, sliced
    2 cups canned artichoke hearts, chopped
    1 cup small pickled onions
    2 garlic cloves, sliced
    Salt and black pepper
    1 cupsmall red pepper
    1 cup halloumi cheese, cut into small cubes
    1 teaspoon rosemary
    1/4 cup olive oil


    - Preheat oven 180 degrees Celsius.
    - Combine flour and salt in a bowl.
    - Rub flour mixture with butter and vegetable fat with finger tips or pulse in a food processor, until mixture resembles coarse meal.
    - Add ice water gradually (1 tablespoon at the time) while kneading dough holds together.
    - Wrap in a plastic wrap and refrigerate for about 15 minutes.
    - Clean red pepper from seeds, stuff them with cheese and set aside.
    - Slice sausage and place in a bowl.
    - Mix artichoke, pickled onion and garlic with the sausage.
    - Season with rosemary, salt and black pepper.
    - Gently shape dough into a disk, and place in baking sheet.
    - Place the sausage mixture and red pepper into center of the dough.
    - Fold edges of dough by hand to cover part of the filling.
    - Bake for about 30 minutes or until golden brown.
    - Brush the Pie with olive oil and serve.
