Ingredients
1 ripe avocado
1 tablespoon lemon juice
1/4 cup hot water
2 tablespoon gelatin powder
4 tablespoon cream cheese, soften
1/4 cup breadcrumbs
1/4 cup ground pistachio
1 tablespoon butter, soft
For Garnish
1 tablespoon tomato, finely chopped
1 tablespoon onion, finely shopped
1 tablespoon corn kernels, canned
1 tablespoon avocado, chopped
1 teaspoon cilantro, chopped
1 tablespoon lemon or lime juice
1 tablespoon lemon juice
1/4 cup hot water

Method
- Peel avocado and remove the pit, place with lemon juice in food processor.
- Process until smooth, season with salt and pepper.
- Pour water in a small bowl, sprinkle gelatin and stir to dissolve.
- Combine avocado mixture with gelatin and cream cheese in a bowl.
- Line the sides of a small spring form tin with waxed paper.
- Mix breadcrumbs with pistachio and butter in a bowl.
- Press breadcrumbs mixture into the bottom of the tin.
- Place the avocado mixture on top.
- Refrigerate for about 4 hours to hold.
- Mix garnish ingredients in a bowl, season with salt and pepper.
- Unmold avocado mousse, place in a serving dish.
- Garnish with the avocado salsa and serve.
