Ingredients
1 cup cilantro leaves
½ cup peppermint leaves
6 garlic cloves
½ tsp cayenne pepper
2 tbsp crushed almonds
3 tbsp lemon juice
¼ cup olive oil
Salt and pepper to taste
Method
• Blend all ingredients in a food processor,
gradually adding oil, to have a smooth well combined pesto.
• Season with salt and pepper.
N.B. (This pesto could be served with grilled fish or grilled chicken, or used for marinating)
