    Sausage vegetable stew recipe


    3 tablespoons olive oil
    1 large onion, diced
    2 garlic cloves, finely chopped
    1/2 kilo sausages
    1 cup potatoes, peeled and cubed
    1/2 cup carrots, pepped and cubed
    1/2 cup zucchini, cubed
    1 1/2 tablespoon flour
    Salt and pepper
    1 cup diced tomato with juice
    4 cups water
    1/2 cup green beans, cooked
    1/2 cup kidney beans, cooked or canned and drained
    1 tablespoon parsley, chopped 


    - Heat oil in a pan over a medium high heat, add onion and garlic and stir till translucent.
    - Add sausages and stir till color changes.
    - Mix in potatoes, carrots, zucchini and flour, season with salt and pepper.
    - Add tomato with juice and water, let boil.
    - Reduce heat and simmer for about 15 minutes until vegetables are tender.
    - Add beans and parsley and stir for about 5 minutes.
    - Serve sausage-vegetable stew hot with rice and bread.
