    Ginger -Apple Cake recipe


    1 cup butter (at room temperature)
    1 1/2 cup brown sugar
    1 cup granulated sugar
    2 1/2 cups flour
    2 1/2 teaspoons baking powder
    1 teaspoon cinnamon
    1/2 teaspoon ground ginger
    1/2 teaspoon vanilla
    4 eggs
    2 1/2 cups grated apples


    - Preheat oven to 180 degrees Celsius.
    - Grease or spray rectangular oven dish(20*30 cm,height 4 cm)
    - Sprinkle some brown sugar in greased dish.
    - Cream butter with sugar (brown and granulated) in an electrical mixer over medium speed.
    - Mix flour in a bowl with dry ingredients.
    - Add flour mixture gradually to creamed butter and beat on a low speed, mix in eggs.
    - Stir in apple and raisins to combine.
    - Pour batter in prepared oven dish.
    - Bake in the center rack for about 30 minutes or until a toothpick inserted in center of cake and comes out clean.
    - Cool cake for few minutes, then invert into a wire rack to cool completely.
    - Cut into cubes and serve.
