1 tablespoon yeast
1 cup warm water
2 1/2 tablespoons sugar
3 3/4 cup flour
1/2 tablespoon baking powder
Pinch of salt
1/2 cup butter (soften)
1 egg
1/2 teaspoon vanilla
2 1/2 tablespoons milk
Oil for frying
Garnish: (Date syrup / sugar syrup / powdered sugar / cinnamon sugar)

Method
- Dissolve yeast in warm water with half the sugar, let stand for 5 minutes or until foamy.
- Mix flour, sugar, baking powder and salt in a mixing bowl at low speed.
- Add yeast mixture and the rest of ingredients.
- Knead for about 10 minutes or until dough is smooth and elastic.
- Place dough into greased bowl, cover and leave for one hour or until doubled in size.
- Turn dough into a lightly floured surface, roll gently to (1/2 inch / 1 ? cm) thickness.
- Cut into small rounds or shape into small balls, cover and let rest again for 30 minutes or until doubled in size.
- Heat oil in a deep fryer or deep sauce pan.
- Slip or slide the mini doughnuts (few at the time) into the hot oil.
- Splash some of the hot oil over the top to cook evenly until golden brown.
- Remove and drain on a wire rack.
- Glaze while hot with syrup or sprinkle with sugar or roll in a cinnamon sugar.
