Cranberry and orange glazed ham Recipe
Ingredients
1 4.5kg (about 1/2) rump end leg ham
20-25 whole cloves
2 oranges
1 275g jar cranberry sauce
100g (1/2 cup, firmly packed) brown sugar
1 tablespoon wholegrain mustard
Crusty bread, mixed salad leaves and extra cranberry sauce, to serve

Method
Step 1
Preheat oven to 190°C. Use a small, sharp knife to remove the rind from the ham. Score the top of the ham to form large diamonds. Stud each diamond with a clove.
Step 2
Use a zester to remove the rind from the oranges. (Alternatively, use a vegetable peeler to peel the rind from the oranges. Use a small, sharp knife to remove the white pith from the rind. Cut the rind into very thin strips.) Juice 1 orange and reserve 2 tablespoons of the juice.
Step 3
Place the ham on a roasting rack in a large roasting pan. Add 60ml (1/4 cup) water to the pan (this will prevent the glaze from burning on the base of the pan).
Step 4
Combine orange rind, reserved orange juice, cranberry sauce, sugar and mustard in a small bowl. Brush ham with 1/2 the glaze. Cook in preheated oven for 30 minutes. Remove from oven and brush with the remaining glaze. Cook for a further 30 minutes or until the glaze begins to caramelise.
Step 5
Serve the ham with the bread, salad leaves and extra cranberry sauce.
