Fruit mince pies Recipe
Ingredients
2 cups plain flour
150g butter, chilled, chopped
1/4 cup caster sugar
1 egg yolk
2 tablespoons iced water
2 cups fruit mince (see note)
1 egg, lightly beaten
2 tablespoons white granulated sugar
Icing sugar mixture, to serve

Method
Step 1
Using a food processor, process flour, butter and sugar until mixture resembles breadcrumbs. Add egg yolk and iced water. Process until mixture just comes together, adding extra water if necessary. Divide dough in half. Shape into 2 discs. Cover in plastic wrap. Refrigerate for 30 minutes or until firm.
Step 2
Preheat oven to 180C/160C fan-forced. Grease 24 x 6.7cm (top) fluted loose-based mini tartlet pans.
Step 3
Roll 1 portion of dough between 2 sheets of baking paper until 3mm thick. Using an 8.5cm-round cutter, cut 24 rounds from dough, re-rolling dough scraps. Line prepared pans. Place on a baking tray. Divide fruit mince evenly between prepared cases.
Step 4
Roll remaining dough between sheets of baking paper until 3mm thick. Using a 6cm star-shaped cutter, cut 24 stars from dough, re-rolling dough scraps. Using a 2cm star-shaped cutter, cut a small star from the centre of each large star (discard small stars). Place large stars over fruit mince. Brush lightly with egg. Sprinkle stars with white sugar.
Step 5
Bake for 20 to 25 minutes or until pastry is golden and firm. Cool in pans for 10 minutes. Carefully transfer to a wire rack to cool completely. Serve dusted with icing sugar.
