Fruit mince tarts Recipe
Ingredients
1 1/4 cups plain flour
1 teaspoon baking powder
2 tablespoons custard powder
1/4 cup icing sugar
80g butter, cubed
1 egg, separated
1 to 2 tablespoons chilled water
410g jar fruit mince
1 tablespoon white sugar

Method
Step 1
Place flour, baking powder, custard powder and 2 tablespoons of icing sugar into a food processor. Process for 30 seconds or until well combined. Add butter. Process until mixture resembles fine crumbs. Add egg yolk and 1 tablespoon of water. Process until pastry comes together, adding more water if necessary.
Step 2
Turn pastry onto a lightly floured surface. Knead until smooth. Wrap in greaseproof paper. Refrigerate for 20 minutes, or until firm.
Step 3
Preheat oven to 160°C. Lightly grease 24 x 40ml patty pan holes. Roll pastry out between 2 sheets of baking paper until 4mm thick. Using a 7cm fluted round cutter, cut out 24 circles. Press circles into prepared holes. Press leftover pastry together. Roll out again. Using a 4cm star-shaped cutter, cut out 24 stars.
Step 4
Place a heaped teaspoonful of fruit mince into each pastry shell. Brush pastry stars with eggwhite. Sprinkle with sugar. Place stars over fruit mince. Bake for 15 to 20 minutes, or until pastry is light golden. Allow to cool in pans for 10 minutes. Transfer to a wire rack to cool completely. Dust with remaining icing sugar
