Melted butter, to grease
2 sheets (25 x 25cm) frozen ready-rolled puff pastry, just thawed
200g (1/2 cup) bought fruit mince
Icing sugar, to dust

Method
Step 1
Preheat oven to 200°C. Brush twenty-four 40ml (2-tablespoon) capacity mini muffin pans with melted butter to grease.
Step 2
Use a round 6.5cm-diameter pastry cutter to cut 12 discs from each pastry sheet. Press 1 pastry disc into each pan. Spoon the fruit mince evenly among the pans.
Step 3
Bake in oven for 10-12 minutes or until light golden. Set aside in the pans to cool completely. Transfer to a serving platter. Dust with icing sugar to serve.
