Strawberry and mascarpone lattice wafers Recipe
Ingredients
2 x 250g punnets strawberries, hulled, halved
1/4 cup (55g) caster sugar
1 teaspoon vanilla extract
250g mascarpone cheese
1/4 cup (60ml) thickened cream
1 tablespoon icing sugar, sifted
12 Arnott’s Lattice biscuits

Method
Step 1
Place strawberries, caster sugar and vanilla in a saucepan over medium-high heat and cook, stirring, for 1-2 minutes, or until sugar has melted and the strawberries have just started to soften (don’t overcook). Remove from heat.
Step 2
Whisk together mascarpone, cream and icing sugar. Place half the biscuits on serving plates, top each with a dollop of the mascarpone mixture, followed by some of the strawberries and drizzle with strawberry juice. Top with the remaining biscuits. Serve.
