Ingredients
25g butter
2 bunches baby (Dutch) carrots, trimmed, peeled
1/4 cup maple syrup
150g baby spinach
1/3 cup flaked almonds, toasted

Method
Step 1
Melt butter in a large frying pan over medium heat. Add carrots. Cook, turning occasionally, for 5 minutes or until golden.
Step 2
Add maple syrup and 2 tablespoons cold water. Bring to the boil. Reduce heat to low. Simmer until liquid has almost evaporated and carrots are tender and caramelised. Add spinach. Cook, tossing, for 1 minute or until spinach has wilted. Add almonds. Season with salt and pepper. Toss to combine. Serve.
