Orange and star anise glazed ham Recipe
Ingredients
7kg cooked leg ham
1 cup firmly packed brown sugar
3/4 cup orange juice
1 star anise
4 medium oranges
2 teaspoons whole cloves

Method
Step 1
Position oven rack on the lowest shelf. Preheat oven to 180C/160C fan-forced. Cut through ham rind 8cm from shank. Run thumb underneath rind to separate from fat. Peel back and remove rind. Place ham on a wire rack in a large baking dish. Pour enough water into the baking dish to cover the base.
Step 2
Place sugar, orange juice and star anise in a saucepan over medium-high heat. Cook, stirring for 5 minutes or until sugar dissolves. Bring to the boil. Reduce heat to low. Simmer for 5 minutes or until mixture has thickened slightly.
Step 3
Remove from heat. Using a small sharp knife, remove skin and white pith from the oranges.
Step 4
Thinly slice oranges. Arrange slices over ham, securing with cloves. Brush half the syrup over the ham.
Step 5
Bake for 1 hour 30 minutes, basting every 15 to 20 minutes with remaining syrup, or until top is golden and oranges start to caramelise. Cover loosely with foil. Bake for 30 minutes or until heated through. Serve.
