1kg chat potatoes
25g butter
1 tablespoon olive oil
3 garlic cloves, thinly sliced
1 tablespoon chopped fresh lemon thyme

Method
Step 1
Place potatoes in a saucepan. Cover with cold water. Bring to the boil over medium-high heat. Reduce heat to medium. Cook for 10 to 12 minutes or until tender. Drain.
Step 2
Return potatoes to pan over medium heat. Add butter and oil. Cook, tossing, for 5 to 6 minutes or until golden. Add garlic and thyme. Cook for 2 minutes. Season with salt and pepper. Serve.
