Spiced maple-glazed nuts Recipe

3 eggwhites
2 tablespoons maple syrup, plus extra to drizzle
5 cups mixed nuts (we used macadamias, almonds, cashews, pecans and hazelnuts)
1/2 cup (75g) pumpkin seeds (pepitas)
1/2 cup (80g) sunflower seeds
1 teaspoon chilli flakes
1 teaspoon cumin
1 teaspoon mixed spice

Method
Step 1
Preheat oven to 180°C. Line a large baking tray with baking paper. Place eggwhites in a large bowl and whisk with electric beaters until soft peaks form. Add maple syrup and beat to just combine. Set aside.
Step 2
Place all remaining ingredients in a plastic container with a lid and shake well to combine. Tip nut mixture into eggwhite mixture, gently stirring to coat well.
Step 3
Spread on the baking tray and roast for 10 minutes. Drizzle nuts with a little extra maple syrup, then toss to combine. Roast, tossing once, for a further 10-15 minutes until golden and toasted – watch the nuts to make sure they don’t burn. Cool completely, then place in gift bags.
