Traditional Xmas pudding Recipe
Ingredients
1.5kg mixed dried fruit
1 cup (225g) white sugar
1 cup (200g) brown sugar
250g butter
2 teaspoons bicarbonate of soda
3 eggs
1/4 cup (60ml) brandy
2 cups (300g) self-raising flour
2 teaspoons mixed spice
1 teaspoon ground cinnamon
1/3 cup (50g) plain flour

Method
Step 1
Place the fruit, sugars, butter and 2 cups (500ml) water in a saucepan. Stir over a low heat until the butter melts. Simmer for 5 minutes. Stir in the bicarbonate of soda. Cool.
Step 2
Whisk together the eggs and brandy. Place the fruit mixture in a large bowl. Add the egg mixture, self-raising flour, mixed spice and cinnamon. Mix until well combined.
Step 3
Plunge a 75cm square piece of unbleached calico into boiling water for 30 minutes. Drain. Use gloves to squeeze out. Spread out the cloth. Spread with the plain flour leaving a 10cm border. Place mixture in the centre. Gather corners and tie firmly.
Step 4
Cook in a large saucepan of boiling water, cover for 6 hours, adding more water when necessary. Hang in a dark, cool place.
Step 5
Reheat in boiling water for 1-1 1/2 hours. Serve with custard.
