8 pavlova nests
1 large mango, peeled, diced
Double cream, to serve
Passionfruit curd
1 egg
1 egg yolk
1/4 cup caster sugar
2 passionfruit, halved
50g butter, chopped

Method
Step 1
Place egg, egg yolk and sugar in a heavy-based saucepan. Whisk to combine. Add 1/4 cup passionfruit pulp and butter. Place over medium heat. Cook, stirring with a wooden spoon, for 7 to 8 minutes or until mixture coats the back of spoon. Remove from heat. Stand for 5 minutes. Pour into a bowl. Cover surface with plastic wrap. Cool completely.
Step 2
Spoon 1 tablespoon passionfruit curd into each nest. Top with cream and mango. Serve.
