Ingredients
1/2 kilo sausage, lamb or beef (casing removed)
1 medium onion, chopped
1 teaspoon garlic, chopped
2 cup tomato sauce
1 cup parsley, chopped
1/2 teaspoon dried mint leaves
1/2 Salt and pepper
1/2 cup heavy cream
1/2 cup feta cheese, cubed
For garnish
Toasted pita bread slices
Fresh mint

Method
- Preheat oven to 180 degrees Celsius.
- Place sausage in large pan over medium high heat, and stir for about 4 minutes.
- Remove excess fat from pan.
- Add onion and garlic, stir for about 5 minutes until tender.
- Add tomato sauce and ? cup parsley.
- Season with mint, salt and pepper, cook for about 5-7 minutes.
- Spread some of the sauce in an oven dish, cover with a layer of eggplant slices.
- Spoon some sauce then another layer of eggplant.
- Pour the remaining tomato sauce on top.
- Mix heavy cream and feta cheese, spread on top.
- Bake in the oven for about 30 minutes until golden brown.
- Serve with toasted pita bread and garnish with mint leave
