    Spiced Chicken and Vegetable Rice recipe


    2 Tablespoons olive oil
    1 medium onion, chopped
    1 red bell pepper, diced
    1 green bell pepper, diced
    2 cups tomato, diced with juice
    Salt and pepper
    2 cups basmati rice, cooked
    1/2 kilo cooked chicken cubed, boneless and skinless
    1 cup kidney beans, cooked
    1/2 teaspoon fresh oregano
    1/2 teaspoon ground cumin
    1 teaspoon ground coriander
    1/2 teaspoon ground cinnamon
    sour cream and grated cheese for garnish


    -Heat oil in a saucepan over a medium heat, saute onion till translucent.
    -Add bell pepper and tomato, let boil, season with salt and pepper
    -Reduce heat and simmer for about 7 minutes till sauce thickened.
    -Add rice, chicken, beans, season with spices and stir.
    -Serve warm, garnish with sour cream and cheese.
