Suzie's little fruitcakes Recipe
Ingredients
3 tablespoons instant coffee
1kg mixed dried fruit
125ml (1/2 cup) brandy
250g block fruit and nut chocolate, roughly chopped
300g (2 cups) self-raising flour, sifted
Cellophane bags, ribbons and clothes pegs, to decorate

Method
Step 1
Dissolve coffee in 1 1/2 cups of boiling water. Place dried fruit, brandy and coffee mixture in a large bowl and set aside overnight to macerate.
Step 2
Preheat oven to 160°C. Melt chocolate in a bowl over a pan of simmering water. Once melted, mix into the fruit mixture, then add flour. Spoon mixture into mini-loaf pans and bake in oven for 25-30 minutes or until cooked through.
Step 3
Set aside to cool, then place in cellophane bags and seal with ribbons or clothes pegs.
